Use the following command:
/replaceitem entity @p slot.armor.head minecraft:paper 1 1 {display:{Name:"shake"}}
"shake" is also interchangeable with
- shake_1
- shake_2
Rename item using an anvil
> Item to be renamed is minecraft:paper
